Chef counters are a treat, but a seat in front of Chef Kazushige Suzuki feels like a best-kept secret. The room has a presence of its own, notable in scale and hidden away in the back past a cocktail bar. Friendly as ever and seemingly never in a hurry, the chef sources fish entirely from Japan and keeps his nigiri traditional with little more adornment than a brushing of nikiri. Other dishes that bookend the meal flex far more creativity and panache. Hokkaido hairy crab with capellini and shiso or snow trout marinated in koji for seven days are uniquely satisfying, while beef sourced from Japan makes regular appearances. At the meal’s end, disbelief may turn into wonder as guests dive into apple sorbet boldly topped with Yamazaki 12 whisky.

Badger Flame beets set over creamy Camembert with pine nuts delight; Rhode Island squid with fava beans and chopped hazelnuts is surprising; and cavatelli, made in house, is tossed with spring onion, mushrooms and lemon breadcrumbs for a satisfying dish.

Chef/owners Masashi Ito and Kevin Kim have no interest in a solemn sushi temple, and in the shadow of One World Trade, their 16-seat counter is full-on revelry. Excellent quality fish, much of it flown in from Japan, deep knife cuts and potent saucing define the nigiri. And whereas some chefs save all of their fireworks for the nigiri progression, appetizers like kampachi with yuzu chive oil and desserts like strawberry panna cotta are compelling bookends. The crowd skews young, leans on whiskey and sake, and, by the meal’s end, are already looking forward to their next reservation, which they booked long before they first walked in.
